Go to Youtube and look up Li Jie playing Sunburst by Andrew York. The piece is played with the 6th string (as well as the 1st string) tuned down to D. But at 2:17 she plays an open-6th string E, and a little afterwards she plays that open string again and it sounds a D!!! Any guess what´s going on?

Wow, that's bizarre! When I first read this, I thought "He's out of his mind," but you are right. That has to be an overdub, unless she has figured out how to raise the pitch of the string a whole step just by how she plays it.
Funny thing is I believe the low 'E' is correct, and isn't difficult to play.

The score has an E at that point, so she´s correct, but why the gimmick? She certainly doesn´t need it.

Well, it's a "produced" video. They probably spliced together several video takes, it's likely she just made a mistake at that point and no one noticed it when they were editing the video together.
Nice playing, though. I'll never complain about my small hands again! That guitar looks bigger than a cello in that little girl's hands, but she can obviously play the hell out of it!

Does anyone know what kind of guitar she is playing in this videoi? Also, she plays a different guitar in some of her other videos like Bach BWV 1007. It has a hole in the top of the headstock. Anyone know what kind it is?

Don't know what she plays on Sunburst, but the one with the hole in the headstock is a Gropp.
